Types of Kitchen Knives: A Dimensional Reference for 20 Blade Shapes
Of the twenty shapes below, four are essential and the rest are either duplicates under different names or genuine specialists. A blade shape is defined by three measurements — length, height at the heel and spine thickness — and those three tell you what cut it was ground for far more reliably than its name does. Chef and gyuto are the same category; santoku and bunka differ only at the tip.

You need four knives. A 200-210 mm chef or gyuto, a 150 mm petty, a 90 mm paring knife and a serrated bread blade. Everything else on this page is either a specialist tool for a job you may never do, or the same knife with a different name on the box.
That said, the names are worth knowing, because the geometry underneath them is real. A nakiri and a santoku look similar in a photograph and behave completely differently on a board, and the reason is 6 mm of blade height and a 0.5 point difference in Wedge Ratio. A kiritsuke and a gyuto can be the identical knife with a different tip shape, or they can be entirely different tools, depending on whether the grind is single or double bevel.
Every shape below is described by what the calipers say: length range, height at the heel, spine thickness 5 mm forward of the heel, and the Wedge Ratio those two produce. Wedge Ratio is spine thickness divided by blade height, times 100 — lower falls through, higher splits.
Reading a blade shape off its cross-section
Three numbers identify almost any kitchen knife without a label.
Length tells you the stroke it's for. Under 120 mm means in-hand work, where the food is held in the other hand rather than resting on a board. Between 120 and 180 mm means small board work. From 180 to 240 mm is general board work. Over 240 mm is a single-pass slicing stroke, where the whole length of the edge is drawn through in one motion without sawing.
Height at the heel tells you whether it's a board knife at all. Under 30 mm and you have no knuckle clearance, so the blade is either for in-hand use or for slicing something already cooked and lying flat. Over 45 mm and it's a board knife. Over 80 mm and it's doing double duty as a scoop.
Spine thickness plus height gives the Wedge Ratio, which tells you what it can be pushed through. Under 3.5 is a thin blade that will chip if you twist it. Around 4 to 5 is a workhorse. Over 6 is splitting geometry — it's designed to force material apart, not to part it cleanly.

If two shapes sit within 0.5 of each other on Wedge Ratio at similar height, they will feel almost identical on a board whatever their names suggest. Scan the Wedge Ratio column top to bottom and the taxonomy reorganises itself. Nakiri, gyuto, bunka and santoku cluster between 3.0 and 4.8 — those are all thin push-cutting blades and they overlap heavily. Chef, sujihiki and slicer sit between 4.8 and 7.5. Paring, bird's beak, yanagiba and deba are all above 7, for completely different reasons.
That's the useful insight: the traditional grouping by cuisine tells you where a shape came from, and the geometry grouping tells you what it does. If you already own a gyuto, a santoku adds nothing measurable. If you own a gyuto, a nakiri does add something — 6 mm more height and a full-flat profile that lets the edge finish every cut against the board without a rocking motion.
Where the Wedge Ratio lies to you
The Chinese cleaver row scores 2.0 to 3.0, the lowest number in the table, which would suggest it cuts more easily than any thin gyuto. It doesn't, quite, and the reason is worth understanding because it applies to a lot of knives.
Wedge Ratio treats the blade cross-section as a triangle running from the spine to the edge. Most knives aren't ground that way. There's a flat section near the spine, a shoulder where the grind begins, and a bevel at the edge. A tall blade with a high shoulder — where the grind only starts 25 mm down from the spine — carries all its thickness in the top half and scores well on a ratio that assumes the taper runs full height.
So the ratio is checked against a second measurement: spine thickness 5 mm above the edge. On a well-ground gyuto that lands around 0.55 to 0.80 mm. On a cheap stamped knife with a high shoulder it can be 1.20 mm on a blade whose heel spine measured a respectable 2.1 mm. That's the knife that looks thin in a photograph and wedges in a potato.
Any figure worth trusting is a figure someone can check. The Wedge Ratio catches most of the difference between knives, the 5 mm measurement catches the rest, and neither of them appears on any packaging.
Single bevel is not a sharpening preference
Single-bevel knives — usuba, yanagiba, deba, traditional kiritsuke — have a wide ground land on one face and a flat back with a shallow hollow, called the urasuki, on the other. This is a functional design, not a stylistic one, and it changes what the knife does in the cut.
An asymmetric edge steers. The food falls away from the bevelled side, which means a single-bevel blade can take a slice off without the slice sticking or the cut curving into the material. That's the entire point and it's genuinely superior for the narrow job it does.
The costs are steep. The knife is handed — a right-handed usuba is useless in a left hand and the reverse is not fixable. The back must be maintained flat, which means never grinding it and only removing the burr with a very fine stone against the flat land around the hollow. The land angle is set by the grind, so you have no angle choice at all: you lay it flat and follow it. And the edge is fragile in a way a double bevel isn't, because there's nothing supporting it from the other side.
Anyone buying a single bevel as their first serious knife has been sold on aesthetics. They're beautiful and they are the wrong first purchase by a wide margin.

Most home kitchens should stop at slot four or five, and a culinary student's roll needs slots one to six. Nothing on that list is a block set. Block sets exist because a wooden block with eight slots photographs better than three knives, and the filler slots are typically a utility knife, a second smaller chef knife, a set of steak knives and a pair of shears — three of which duplicate work you already have covered.
The other reason to avoid them is grind quality. A set has to hit a total price, so the money goes into the knife people evaluate in the shop, and the rest are made to a cost. Buying three good knives individually costs about what a mid-range eight-piece set does and leaves you with three knives you use rather than eight you don't.
Shapes people buy and then don't use
- Utility knife. Too short for board work, too long and tall for in-hand work. It's the shape that exists to fill a slot in a block. A 150 mm petty does its job better in every dimension.
- Bird's beak. Lovely for tourne potatoes, which almost nobody cuts. A paring knife covers 95 percent of the same work.
- Kiritsuke as a first Japanese knife. The angled tip is fragile and offers nothing a gyuto tip doesn't, unless you're doing the specific tip-led work the shape was designed around.
- Santoku bought alongside a chef knife. Same category, overlapping geometry, and you'll use one of them.
- A second chef knife 40 mm longer than the first. If the 200 didn't suit you, a 240 of the same design won't either - the problem was the grind.
- Granton dimples. They break suction on a thick blade and do nothing measurable on a thin one. Never a reason to choose between two knives.
When two names are one knife
Chef and gyuto are the same category. Gyuto literally means beef knife and it was Japan's answer to the Western chef knife, so the profile, the job and the stroke are shared. What differs is the grind: thinner, harder, flatter, lighter. A gyuto is a chef knife built to a different set of priorities, not a different tool.
Santoku and bunka differ at the tip and nowhere else that matters. Santoku has a rounded sheepsfoot nose, bunka has an angled reverse-tangent tip that gives you a usable point. Same height range, same Wedge Ratio band, same stroke. If you own one, the other is a duplicate.
Slicer, carving knife and sujihiki are three names for a long thin blade meant to make one pass through something already cooked. The sujihiki is the thinner and harder of the three, the Western slicer is usually granton-dimpled and softer, and the carving knife is a slightly shorter slicer sold with a fork. Any one of them handles the work.
Where the naming genuinely does mean something is single versus double bevel, and it's the distinction most product listings get wrong. A knife described as a kiritsuke can be a traditional single-bevel blade that requires a specific skill set, or a double-bevel gyuto with an angled tip that anyone can use. Those are not remotely the same purchase, and the only way to tell from a listing is to look for the urasuki — a photograph of the back face showing a shallow hollow means single bevel, and a flat symmetrical back means it's a gyuto wearing a kiritsuke's hat.
