Chef Knife Size Chart: Measured Length, Height, Weight and Balance from 150 mm to 300 mm
Most home kitchens are best served by a 200-210 mm blade, and the reason has almost nothing to do with length. Blade height at the heel climbs from roughly 33 mm at 150 mm to about 57 mm at 300 mm, and that is the figure that decides whether your knuckles clear the board. The balance point also walks forward roughly 5 mm for every 25 mm of extra blade, which is what people are actually describing when they say a longer knife feels heavy.

Buy a 200 mm or 210 mm chef knife. That covers about 90 percent of home cooking, and if you only ever own one blade it should be that one.
The interesting part is what else moves when you change length, because the marketing only ever quotes the one number. A 150 mm chef knife and a 300 mm chef knife are not the same tool scaled up. Blade height at the heel nearly doubles across that span. Spine thickness climbs. Mass close to triples. And the balance point marches forward, which changes how the knife behaves in your hand far more than the extra 100 mm of steel does.
Every figure on this page comes off a bench rather than a box: digital calipers at five fixed stations along the blade, a scale accurate to a gram, and a balance fixture. Where a range is given, that range is the spread seen across knives of that nominal size, not a single sample dressed up as a law.
The number on the box is not the length of the blade
Nominal length is a marketing size, not a measurement. A knife sold as an 8-inch chef knife is nominally 203 mm, but the actual heel-to-tip distance lands anywhere from about 196 mm to 203 mm depending on where the maker decides the heel ends and whether there's a bolster eating into the edge.
Japanese makers are generally tighter about it. A 210 mm gyuto is usually 206-214 mm of usable edge, because in that tradition the number refers to the blade, not the marketing category. German and French houses are looser, and a bolstered Western knife often loses 8-12 mm of its stated edge to the heel bolster — steel you paid for and cannot cut with, and cannot sharpen without a belt grinder.
That's the first practical consequence. If you sharpen on stones and your knife has a full bolster running down to the edge, the heel will develop a recurve within a couple of years because you cannot take the bolster back at the same rate you take the edge back. Half-bolster and no-bolster designs don't do this.
The size chart
Spine at heel and spine at mid-blade are taken with calipers 5 mm forward of the heel and at the exact midpoint of the edge. Wedge Ratio is spine thickness at the heel divided by blade height at the heel, times 100 — lower falls through food, higher splits it.

If the height is under 44 mm and you have a medium or large hand, you will bark your knuckles on the board — that is the single most common reason a knife gets left in the drawer. Two things in that table deserve staring at. The first is that the 210 mm gyuto row is lighter and thinner than the 200 mm Western row despite being longer. That's not a manufacturing accident, it's a different design philosophy: the Japanese blade removes material to reduce cutting force, the German blade keeps material to survive abuse.
The second is the board column. Minimum board long edge is calculated at 1.75 times blade length, which is the working rule for having somewhere to put the food you've already cut. A 240 mm knife on a 300 mm board is why people end up chopping on the worktop, and it's the most common mismatch in a home kitchen.
Blade height is the spec nobody quotes and everybody feels
Height at the heel does three jobs at once. It sets your knuckle clearance, it gives you a surface to scoop chopped food off the board with, and — combined with spine thickness — it determines the Wedge Ratio, which is the geometry that decides whether a butternut squash parts or grips.
Anything under 40 mm at the heel is a slicer wearing a chef knife's name. Between 42 and 46 mm is standard Western. Japanese gyuto tends to run 45-50 mm, and the tall workhorses go past 52 mm. Nakiri and Chinese vegetable cleavers go higher still, which is why they feel so different even at the same length.
Height is also why a taller knife with the same spine thickness cuts more easily. If you keep the spine at 2.2 mm and take the blade from 42 mm tall to 50 mm tall, the Wedge Ratio drops from 5.2 to 4.4 — the wedge behind the edge got shallower, so the food is being pushed apart more gently over a longer distance. That's most of the difference people attribute to the steel.
Hand size, knuckles and where the board stops you
Measure your hand length from the wrist crease to the tip of the middle finger. That's the same measurement glove sizing uses, and it maps reasonably well onto how high your index knuckle sits when you're holding a pinch grip on the blade.

These are derived figures, not gospel. Grip style shifts them by several millimetres — a handle grip rather than a blade pinch raises your knuckles and makes the problem worse, and a very high pinch on the spine lowers them. Anyone with hands at the large end of the range and a standard German 8-inch has probably already found this out the hard way, usually while dicing an onion at speed.
The fix, if you're stuck with a knife you like and knuckles that don't clear, is a thinner board or a taller board edge. Raising the board 20 mm does not help. Lowering the food does.
Balance point, and what people mean by "forward-heavy"
Balance point is measured by resting the knife across a 3 mm steel rod and finding where it sits level, then measuring forward from the heel of the edge. On the chart above it walks from around 8 mm on a 150 mm knife to around 40 mm on a 300 mm knife.
A blade-forward balance means the knife wants to fall through the food on its own. That's pleasant for rock-chopping herbs and heavy prep, and it's why traditional French and German knives with big bolsters feel authoritative. A neutral or handle-biased balance means you're driving the tip yourself, which gives more control for fine work and gets tiring less quickly during a long prep session.
Nobody publishes this number. You can measure it in the shop in about four seconds by balancing the knife on one finger, and it tells you more about how a knife will feel than the entire back of the box does. Do it before you buy.
So which length
Here's the plain version. One knife: 200 mm Western or 210 mm gyuto. Two knives: add a 150 mm petty, not a second chef knife. Three: add a 240 mm if you cook for more than four people regularly, or a serrated bread blade if you don't.
Skip the 300 mm. It exists for restaurant line work where somebody is portioning fifty covers on a 600 mm board, and in a domestic kitchen it spends its life catching the edge of the sink. The 270 mm is a genuinely nice knife for people with big hands and big boards, and it is a specialist purchase, not a first one.
The 150 mm chef knife is also a trap. It looks like a sensible small option and it isn't — at 33 mm tall it has no knuckle clearance and no scoop surface, so it does the petty's job worse than a petty does and the chef knife's job worse than a chef knife does. Buy a 150 mm petty instead. Same length, different geometry, much more useful.
What goes wrong the first time
- Buying up a size because the bigger one looked more serious in the shop, then discovering the board doesn't accommodate the stroke.
- Ignoring the bolster. A full bolster on a 200 mm knife costs you around 10 mm of edge immediately and creates a heel recurve after two or three years of stone sharpening.
- Assuming a heavier knife is a better knife. Mass in the 200 mm class ranges from about 160 g to 195 g, and the light ones are usually lighter because the grind is thinner, which is a feature.
- Comparing a Japanese 210 to a Western 200 as if the 10 mm mattered. It doesn't. The 0.4 mm difference in spine thickness does.
- Measuring hand size while relaxed. Do it with the fingers flat and spread, wrist crease to fingertip, or you'll undershoot by 5-8 mm.
One more, and it's the one that costs the most money: buying a longer knife hoping it will cut better. Length doesn't reduce cutting force. Geometry does. A 200 mm knife with a 4.3 Wedge Ratio will fall through a sweet potato that a 240 mm knife with a 5.8 splits, every time, regardless of what either one is made of.
