Santoku vs Chef Knife: Blade Geometry, Belly Curve and Which One Suits Your Cutting Motion
One number decides this and it is not length, weight or country of origin. It is belly radius: a chef knife's front third is a curve of roughly 230-250 mm, a santoku's is 620-700 mm, and that difference determines whether the blade rocks or lands flat. If you rock-chop, buy the chef knife. If you push-cut or tap-chop, buy the santoku.

Belly radius decides it. Fit a circle to the front third of the edge and a Western chef knife comes out at 230 to 250 mm; a santoku comes out at 620 to 700 mm. That is the entire difference between a blade that rolls smoothly through a rocking stroke and a blade that lands along its whole length in one flat push.
Everything else people argue about — Japan versus Germany, 7 inch versus 8 inch, sheepsfoot tip versus pointed tip, dimples versus no dimples — follows from that one measurement or does not matter much at all.
So the question is not which knife is better. It is which motion your hands already do. Watch yourself dice an onion: if the tip stays planted on the board and the heel lifts and falls, you rock, and a santoku will leave uncut hinges at both ends of every stroke. If the whole edge comes down together and travels forward, you push-cut, and a curved chef knife is landing on 60 mm of its edge and rolling the rest of it against the board for nothing.
Two shapes, four measurements
Belly radius is the one nobody publishes. Trace the front third of the edge onto paper, fit a circle to the trace, and read off the radius. Small radius equals tight curve equals rocking. Large radius equals nearly flat equals push cutting. A nakiri has no measurable radius at all, which is what makes it a specialist.
Board contact arc follows directly from that. It is how much of the edge is touching the board at any instant during your normal stroke. A tight-radius chef knife rocking through herbs contacts 90 to 130 mm at a time. A santoku pushed straight down contacts 150 to 180 mm. That is why a santoku feels efficient on repetitive slicing and clumsy on a pile of parsley.
Blade height at the heel governs knuckle clearance and how much prep you can lift off the board on the flat of the blade. Santokus are typically 2 to 5 mm taller than the equivalent chef knife despite being shorter, which is a deliberate design choice and the reason they feel bigger in the hand than the length suggests.
Wedge Ratio — spine thickness divided by blade height at the same station, times 100 — predicts cutting force. Santokus almost always measure lower than their stablemate chef knives, because they are ground thinner to suit a push cut that has no rocking motion to help it through.

Every santoku is shorter, thinner at the heel, lower on Wedge Ratio, ground at a slightly shallower angle and lighter than its chef-knife stablemate — and every one is taller. That combination is not accidental; it is what a push-cutting blade needs.
The gyuto row is there because it is the shape people miss when they frame this as a two-way choice. A gyuto is the Japanese take on a Western chef knife: chef-knife length, santoku thinness, and a belly radius of around 420 mm that sits deliberately between the two. It rocks adequately and push-cuts well. For a lot of cooks it is the honest answer to this whole page.
Notice also how far apart the Victorinox santoku and the Wusthof chef knife sit on mass — 150 g against 250 g. That is a 67% difference in the weight your wrist moves, tens of thousands of times a year.

The santoku's flat front third means that at the end of each rocking stroke the tip lifts clear before the cut finishes, and the food stays connected by a thin hinge that has to be cut again. It feels like the knife is blunt. It is not; it is the wrong shape for the hands using it.
The reverse complaint is quieter and just as common. Someone push-cuts with a German chef knife, wonders why every slice needs a shove, and blames the steel. The blade is contacting the board on a third of its length and dragging the remainder sideways through the food.
Height, knuckles and the thing you feel on day one
Santokus run 2 to 5 mm taller at the heel than the chef knives they sit beside, and that shows up immediately as knuckle clearance. With a 47 mm blade and a pinch grip, most hands get 26 to 28 mm of room between the knuckles and the board. Drop to a 44 mm blade and it is 26 mm at best, which is enough for most people and not enough for anyone with large hands or a habit of gripping low.
Rapping your knuckles on a board once is annoying. Doing it while dicing four onions changes how you hold the knife, usually by choking up onto the spine, which then wrecks your control. So if you have ever caught your knuckles on a board, buy tall.
Height also determines how much prep you can move on the flat of the blade. A 52 mm nakiri face lifts a whole diced onion in one go. A 44 mm chef knife face lifts about two thirds of it and deposits the rest on the counter.
The counter-argument for a shorter blade is honest: a taller blade needs more force to push through a large item, because it is displacing more material for longer. On a dense root vegetable a 52 mm nakiri genuinely does need more effort than a 45 mm chef knife of the same thickness. Height is a trade, not a free upgrade.
Why santokus feel faster than they weigh
Every santoku in the table sits closer to the hand than its chef-knife equivalent. The Wusthof santoku balances 18 mm forward of the heel against 25 mm for the chef knife; the Victorinox santoku sits at 9 mm. Less mass out in front means less rotational inertia, which means the blade changes direction more willingly.
That is what people mean when they say a santoku feels nimble. It is not primarily about the 45 g of mass difference — it is about where that mass sits relative to your pinch.
The trade runs the other way for repetitive rock-chopping. A front-heavy 250 g chef knife falls through an onion partly under its own weight, and over an hour of prep that saved effort is real. Balance forward is fatiguing for fine work and restful for volume work.
There is a practical way to test this without any equipment: pinch the blade just ahead of the handle, let the knife hang, and see where it settles. If it wants to nose down hard, it is a volume knife. If it sits nearly level, it is a control knife.
The dimples, honestly
Those oval scallops along the face — kullenschliff, or a Granton edge — are supposed to break the suction that makes wet slices cling to the blade. The claim is not nonsense. Air gets into the gap, surface tension breaks, and the slice releases.
The effect is modest and situational. On thin slices of a moist, starchy item, most owners find dimples genuinely help. On sticky items like cheese, and on anything cut thicker than a few millimetres, the slice sticks to the flat between the dimples and the difference disappears.
What dimples definitely do not do is fix a thick blade. A knife measuring 2.6 mm at mid-blade with dimples will still wedge in a dense root vegetable; a 1.8 mm blade without them will not. Food release is dominated by how much blade face is in contact with the cut, and that is a Wedge Ratio question first and a surface-treatment question a distant second.
Do not pay a premium for them, and do not avoid a knife that has them. If you want real food release, buy the thinner blade.
Fitting the knife to your hand

Any knife outside those bands will need a compromised grip, and a compromised grip is how people cut themselves. The pattern that emerges from those bands is that smaller hands are usually better served by a santoku and larger hands by a chef knife — not because of shape, but because the santoku's shorter length and taller blade happen to suit a smaller span, while the chef knife's length suits a longer reach.
That is a tendency, not a rule, and motion still wins. Someone with 160 mm hands who rock-chops should buy a 180 mm chef knife rather than a santoku they will fight.
If you already own one, what should the second be?
Own a chef knife and want a second board blade? Do not buy a santoku. The overlap is around 46%, which sounds low until you realise most of the difference is in a motion you probably do not use. Buy a 165 mm nakiri instead — completely flat, 52 mm tall, and genuinely a different tool.
Own a santoku and want a second? A 200 mm chef knife or a 210 mm gyuto adds the length you are missing for large items and long draw slices, which is the santoku's one real weakness.
Own neither and cannot decide? Buy a 210 mm gyuto. It sits at 420 mm belly radius, rocks acceptably, push-cuts well, and takes both cutting motions without complaint. That is not a fence-sitting answer; it is what the geometry actually says.
One thing worth doing before any of this: spend five minutes dicing an onion and watch your own hands. Nearly everybody assumes they rock-chop because that is what they have seen on television, and a good half of home cooks push-cut without ever having named it. The knife you should own is determined by the motion you already have, not the one you intend to learn.
