The Knife Block Overlap Matrix: Which Pieces Duplicate Blades You Already Own
Four blades cover 20 of the 22 distinct cuts a home kitchen asks for: a 200 mm chef's knife, an 89 mm paring knife, a 250 mm serrated bread knife, and one specialist picked to match what you cook. Measured against each other, most pieces in a 15-piece block score above 70% dimensional overlap with another piece in the same block, which means they are the same knife ground twice.

Four. A 200 mm chef's knife, an 89 mm paring knife, a 250 mm serrated bread knife, and one specialist chosen by what you actually cook. Between them those four cover 20 of the 22 distinct board tasks a domestic kitchen throws up, and they take four slots instead of fifteen.
A 15-piece block is not a set of fifteen tools. It is three or four genuinely different blades, eight steak knives, a rod that is not a sharpener, and a handful of pieces that are the core blades ground marginally differently and sold as separate objects. Put calipers on them and the duplication stops being an opinion. A 150 mm chef's knife and a 140 mm utility knife sit within 10 mm of each other on edge length, within 6 mm on blade height at the heel, and within 2° per side on measured bevel. Same tool. Different label.
So this page does not argue about it. It measures the pieces, scores each one against every other piece in the same block, and marks it keep, duplicate or filler.
What overlap means when you measure it rather than eyeball it
Two knives do the same job when four numbers land close together. Not when they look similar in a product photo.
- Edge length within 25 mm. Beyond that gap the longer blade starts covering strokes the shorter one physically cannot finish.
- Blade height at the heel within 8 mm. Height is what gives you knuckle clearance and a face wide enough to scoop off the board.
- Belly radius within 15%, measured as a circle fitted to the front third of the edge. This is the number that decides whether a blade rocks or lands flat, and it is the one nobody publishes.
- Measured bevel within 2° per side. Note measured, not catalogue. Factory grinds routinely miss the stated figure by two to four degrees and drift along the length of the blade.
Score all four, weight them, and you get a single overlap percentage. Anything above 70% and the two blades will never both come out of the block in the same week. One of them quietly becomes the knife you grab when the other is in the sink.
Below 45% you have two genuinely different tools. In between is where personal habit decides, and that is worth knowing too — it means the second blade is a preference, not a gap.

What is left is the kit you already use. Overlap % is a weighted score across edge length, blade height, belly radius and measured bevel — above 70% the two blades make the same cut. Two things jump out of that table. The first is that the 6 inch chef and the 5.5 inch utility are the same knife with different handles, and almost every mid-size block contains both. The second is that the biggest genuine gaps in coverage — a long slicer and a boning knife — are the pieces most often left out of the block entirely.
Belly radius is doing more work here than length. The 178 mm santoku and the 200 mm chef sit only 22 mm apart on edge length, which sounds like heavy duplication, but 640 mm against 230 mm on belly radius makes them genuinely different tools. One rocks. One does not.
The pieces that earn their slot
Your chef's knife does roughly 70% of everything, and at 200 mm it is long enough to finish a stroke through a large onion without the tip dragging. Go shorter and you start sawing. Go to 250 mm and most home boards — the standard 380 × 280 mm board that fits a domestic sink — stop being big enough to use it properly.
Paring knives get dismissed as accessories and then get picked up eight times a day. The job is not board work at all; it is in-hand work, which is why height matters more than length. Twenty millimetres of blade height is enough to control and short enough that your thumb can sit on the spine safely. A 4 inch paring knife is just a small utility knife with worse control.
Serrated bread knives are the one place where geometry stops mattering and tooth pitch takes over. A 250 mm blade with a pointed scallop pattern will cut a cold crust cleanly; the same steel with shallow wavy serrations will crush it. Length here is not vanity — a loaf is around 200 mm across and you need the run-off.
Then the fourth blade, which is the one you choose. Vegetable-heavy cooking: a 165 mm nakiri. Lots of fine work and small produce: a 150 mm petty. Whole chickens most weeks: a 150 mm boning knife. Big roasts and a carving audience: a 200 mm slicer. Pick one. Adding all four is how you end up back at a block.
The same knife, ground twice
Every filler piece in a block exists because block manufacturers price on slot count. Slots are cheap. Steel is not.
The classic trio is the 6 inch chef, the 5 inch santoku and the 5.5 inch utility. All three sit between 125 and 150 mm of edge, between 30 and 38 mm of height, and within a couple of degrees on bevel. Owning two of the three is normal. Owning all three is the block talking.
Steak knives are the honest offender. Eight of them, one job, and that job happens at the table rather than the board. They are not bad knives — they are simply not part of a working kit, and pricing a set on their presence is how an 8-piece block becomes a 15-piece block without gaining a single new capability.
- Serrated tomato knife: obsolete the moment your chef's knife will push-cut a tomato skin under its own weight.
- Second paring knife: 88% overlap with the first. It exists so the block looks full.
- 8 inch bread knife when a 10 inch is also present: 84% overlap, and the shorter one runs out of blade on a boule.
- Sandwich knife, cheese knife, all-purpose knife: marketing names for a 140 mm utility blade.
- Cleaver in a Western block: usually a 180 mm bone cleaver at 4 mm spine, not a Chinese slicer. Different tool, and rarely the one pictured on the box.

The four-blade core misses exactly two things: long single-draw carving, and following a bone line. Both are occasional jobs. If neither happens in your kitchen more than twice a year, stop at four and put the money into better steel and a whetstone.
Combined edge length is worth noticing. The 15-piece block carries more than twice as much steel as the four-blade core and covers less. That is what buying by piece count gets you.
What the block itself is quietly costing you
Wooden slots are abrasive. Every time a blade goes in or comes out, the edge drags across end-grain or across a plastic insert, and on a soft stainless knife at 56 HRC you can measure the loss of keenness across a fortnight of ordinary use. A magnetic strip or an in-drawer tray removes that entirely, and neither needs the counter space a block eats.
The rod supplied with the block is usually a chrome-plated steel with a fine helical cut. It realigns a rolled edge, which is genuinely useful, and it removes almost no metal, which means it cannot restore an edge that has actually worn. Blocks are sold as though that rod is the maintenance answer. It is a third of it.
There is also a storage argument that runs the other way, and it deserves saying plainly: a block keeps blades apart and keeps edges away from hands rummaging in a drawer. If the alternative is loose knives in a cutlery drawer, keep the block. Just do not keep fifteen knives in it.
Audit the block on your counter tonight
- Pull every knife out and lay them on the board in descending edge length. Measure the edge, not the overall length, and do it from the heel to the tip along the cutting edge.
- Measure blade height at the heel with a ruler standing on the board: the spine to the edge, perpendicular.
- Lay a piece of paper under the front third of each edge and trace the curve. Two traces that superimpose within a couple of millimetres are the same profile.
- Mark each bevel with a permanent marker, take three light strokes on a stone or a piece of 1000 grit paper on glass, and look at where the ink came off. Ink gone at the apex only means the factory angle is steeper than you assumed.
- Count how many knives you have picked up in the last month. Most people land on three. That number, not fifteen, is your real kit.
- Anything scoring above 70% overlap that you have not touched in six months goes to a drawer, a friend, or a charity shop. Slots freed up are slots that stop dulling the blades you use.
One warning about the sell-on instinct. A knife that has been sharpened badly for years is usually recoverable, but a knife that has been run through a pull-through carbide sharpener has a scalloped, over-thinned edge that takes a full reprofile to fix. Check for that before you decide it is the piece worth keeping.
