Sharpening on a Whetstone: The Full Stroke Sequence with Pass/Fail Checkpoints

The whole job is two things: raise a burr along the full length of the edge at one consistent angle, then remove that burr without rounding what you just made. Every grit above 1000 is refinement, and none of it helps if the burr never formed. Each stage below has a physical test that must pass before you move up.

Raise a burr the full length of the edge at a consistent angle, then take that burr off cleanly. That is sharpening. Everything else — grit progressions, soaking times, stone brands, stropping compounds — is refinement layered on top of those two events, and none of it rescues an edge where the burr never formed in the first place.

Most beginners fail at the same place. They do fifty strokes a side on a 1000 grit stone, the knife feels a bit better, and they move up to 3000 without ever checking whether the two bevels actually met at the apex. They did not. What has happened instead is that both shoulders got polished and the apex stayed rounded, which is why the knife looks mirror-bright and still will not cut a tomato.

So this page is built as a sequence with gates. Each stage has a stroke count, a pressure, an elapsed time, and one physical test you must pass before you are allowed to move up a grit.

  1. The kit that actually changes the outcome

    • One combination stone, 1000 on one face and 3000 or 4000 on the other. This handles 95% of home sharpening. A separate 220 or 400 grit stone is only needed for chip repair.
    • Something to flatten the stone. A cheap diamond lapping plate, or 120 grit wet-and-dry paper taped to a granite offcut or a sheet of float glass. A dished stone makes a consistent angle impossible, and stones dish faster than people expect.
    • A non-slip base. A damp tea towel folded under the stone works; a moulded holder works better because it also lifts the stone clear of your knuckles.
    • A permanent marker. Colour the bevel, take three strokes, look at what the ink tells you. This single trick is worth more than any amount of reading.
    • A digital kitchen scale. Press the knife against the stone while the stone sits on the scale and you can see exactly how much pressure you are applying. Almost everyone uses two to three times more than they should.
    • A loupe or your phone camera on macro. An apex that is still rounded reflects light along its length as a bright thread. A properly apexed edge reflects nothing.

    Skip the angle guides and clamp jigs. Not because they do not work, but because they teach you nothing about holding an angle, and on a kitchen knife with a curved belly they force a compromise at the tip. Twenty minutes of practice on a cheap blade beats any accessory here.

  2. Setting an angle you can actually hold

    An angle is not a feeling. It is a height. If you know the height of your blade from the edge to the spine, then the height of the spine above the stone is fixed by simple trigonometry — spine height equals blade height multiplied by the sine of the angle.

    So measure your blade height at the heel with a ruler, look it up below, and set the spine at that many millimetres off the stone. Once you have felt the correct height a few dozen times your hand learns it, and the table becomes a check rather than a crutch.

    Find your blade height in the left column, read across to your target angle, and set the spine that far off the stone at the heel. As the blade narrows toward the tip you must lower the spine proportionally or the tip gets sharpened at a steeper angle than the heel.

    That last sentence in the caption is the mistake that ruins more edges than anything else. Blade height at the tip is a third of the height at the heel, so holding the spine at a fixed height along the whole blade puts a 15° heel and a 40° tip on the same knife. The spine has to come down as you travel forward.

    A practical way to feel it: keep your wrist locked, and let your whole forearm drop as the knife slides forward. If your wrist is doing the work, the angle is changing on every stroke.

    Stack the coins beside the stone, rest the spine on them to feel the angle, then remove the stack and sharpen. Do not sharpen with the coins under the spine — the blade needs to travel and the stack will not survive it.

    Coin thicknesses vary a little by mint year and by wear, so measure your own stack with calipers once and write the number on a bit of tape stuck to your stone holder. It takes thirty seconds and removes the guessing permanently.

    Work top to bottom and do not advance until the test in that row passes. If a test fails, drop back one stage rather than adding strokes at the current grit — the fault is almost always upstream.

    Total elapsed time for a knife that is merely dull, skipping stage 1 and stage 5, is around 15 minutes the first few times and closer to 6 once your hands know the angle. If you are spending 45 minutes, the stone is dished or the angle is wandering.

    Pressure deserves one more line, because it is where most people go wrong in the opposite direction from what they expect. Heavy pressure at 1000 grit is correct and productive. Heavy pressure at 4000 grit does nothing except flex the edge away from the stone and round it. When you change grit, change hands as well as stones — think of the fine stages as guiding the knife rather than pushing it.

  5. Reading the burr, which is the only real skill here

    A burr is a thin flap of steel folded over to the far side of the edge, and it appears the moment the two bevels finally meet. It is proof, not a side effect. Without it you do not know the apex has been reached.

    Feel for it by dragging the pad of your thumb from the spine down across the edge, never along it. Across is safe; along is a cut. On the side you have just been sharpening you will feel nothing much. On the opposite side you will feel a faint catch, like the edge of a sheet of paper.

    The critical part is where. A burr that runs from the heel to two-thirds of the way along and then vanishes means the last third — the part of the blade that does all your fine work — is still blunt. That happens because the spine did not come down as the blade narrowed. Go back, drop your elbow through the stroke, and work the front third alone until the burr runs off the very tip.

    Once you can feel a burr reliably, everything else about sharpening becomes bookkeeping.

  6. Deburring is where most edges are lost

    You spent ten minutes creating a burr. Now you have to remove it without tearing a chunk out of the apex on the way, and this is the step everybody hurries.

    The wrong way is to wipe the blade on a cloth or drag it through a cork. That rips the burr off and takes an irregular sliver of apex with it, leaving a serrated microscopic edge that feels sharp for a day and then falls apart.

    The right way is to make the burr progressively smaller until it is small enough to break away cleanly. Alternate sides with descending stroke counts and descending pressure — ten a side, then five, then three, then one, then one — and finish edge-trailing on a strop or on plain newspaper laid over the stone. The burr detaches in pieces so small they leave nothing behind.

    Test by drawing a thumbnail lightly along the edge at 90°. A clean edge bites evenly the whole way. A remaining burr feels like a slight snag that appears and disappears as you travel. If you find one, five more very light alternating strokes will usually take it.

  7. The five ways this goes wrong

    • Rounded apex from a wandering angle. Symptom: mirror-bright bevel, cannot cut paper. Fix: colour the bevel with marker, take three strokes, and see where the ink survives. Ink left at the very apex means your angle was too shallow and you polished the shoulder.
    • Convexed edge from lifting the spine at the end of the stroke. Symptom: knife cuts well for one session, then poorly. Fix: keep the wrist locked and lower the elbow; finish the stroke with the same spine height you started it with.
    • Wire edge from over-working one side. Symptom: shaving sharp on the bench, dull after two onions. Fix: the burr was never removed, only bent. Redo stages 3 and 6 properly.
    • Steeper tip than heel. Symptom: heel cuts cleanly, tip skates. Fix: drop the spine progressively through the stroke, and sharpen the front third separately with the handle raised.
    • Dished stone. Symptom: the middle of the blade sharpens, the ends do not, and nothing you do fixes it. Fix: flatten the stone. Then flatten it again after every second knife — a 1000 grit stone dishes measurably in a single session on a hard blade.
  8. How often to repeat, and when to stop

    A soft German stainless kitchen knife at 56 HRC wants the full sequence every two to four months under daily home use, with a honing rod between times. A Japanese blade at 61 HRC will run six months to a year on the same workload, and when it does need a stone it usually only needs stage 4 onward.

    Stop when the knife passes the three verification tests. There is a strong temptation to keep going up in grit because the bevel keeps looking better, and beyond about 4000 grit for a kitchen knife the returns are aesthetic. A slightly toothier 3000 grit finish actually bites into tomato skin and onion better than a mirror.

    One last thing worth saying plainly. If you sharpen the same knife every month for three years and it starts to feel like it needs more force despite a genuinely sharp apex, the problem is no longer the edge. You have been removing steel from the bevel and the blade is now thicker where the bevel meets the primary grind. That is a thinning job, not a sharpening job, and it is the point at which a lot of people wrongly conclude their knife has worn out.
